Blade comes from the blade or shoulder, and has a line of connective tissue down the middle with some fatty layers. It’s an economical thin cut steak that we enjoy in a salad or on a steak sandwich – it comes cut thin, & is best prepared by sizzling or fast searing on a hot pan.
