Using only the finest golden durum semolina from Bellata Gold milling ensures the sought after golden colour & texture of all Bellingen pastas handmade products.  Our semolina is sourced ethically from an area known as the Golden Durum Triangle of Australia near Tamworth, NSW.   The consistent growing conditions of this region make it some of the most sought after semolina in the world.  We use traditional bronze dies for all extruded pasta, creating pasta with a rougher texture that attracts your sauce rather than deflecting it.
