The Edible Medicinal Mushroom box is a delicious mix of tasty, freshly harvested organic medicinal mushrooms that promotes health and longevity. The variety of mushrooms in the box will vary based on seasonality, and can include a mix of the following mushrooms:

  • King Trumpet mushrooms have a superior protein content when compared to other mushrooms, especially because they contain up to eight types of amino acids that cannot be replaced by other food substitutes and are therefore an excellent food for your body.
  • Shiitake mushrooms contain high levels of the antioxidant L-ergothioneine which helps prevent cell breakdown and encourages a faster cellular renewal process, leading to healthy collagen and elastin production. FUN FACT: Ergothioneine is only produced by bacteria and fungi. Mammals – such as us – need to consume and absorb it from an external source.
  • Lion’s Mane mushrooms provide a wide range of powerful health benefits, and when eaten, improve digestion, strengthen the immune system (by regulating bacteria in the gut and intestines), and lower your body’s lipid profile via the soluble fibre binding to cholesterol in the small intestine and moving it through the rest of the digestive tract for disposal.
  • Coral Tooth mushrooms are a close relative to Lion’s Mane mushrooms containing similar compounds as well as ‘corallocins’ which are known for their for their nerve growth benefits
  • Pioppino mushrooms have both anti-inflammatory and anti-fungal properties, they are also high in antioxidants and are known to offer osteoporosis support.

These mushrooms are nutrient-dense with immunomodulatory properties and are all low in calories, fat and salt but high in protein. They (specifically) contain all the essential amino acids your body needs to stay healthy and are the ONLY fresh vegetables that contain Vitamin D!

How to Cook?

If in doubt you can cook these mushrooms the same way you would cook button mushrooms.

Here are some great cooking tips that make them even more delicious though:

• Always cook mushrooms on a medium heat (not high) for longer, around 10-15 minutes. It cooks them down more thoroughly and gives you a better flavour.
• Fry or sauté them in butter and/or oil with tasty accompaniments such as shallots, garlic, herbs and salt and pepper to season.
• Lion’s Mane – dry fry this mushroom for a few minutes with no oil/butter to remove excess water. Then cook as normal according to your preference.
